Ingredients:
  • 200 gr white glutinous rice flour
  • 1/2 tsp vanilla powder
  • 250 gr sugar
  • 1/2 tsp fine salt
  • 1/2 coconut, grated
  • 200 gr thick coconut milk
  • 1 egg

  • In a bowl, mix together the white glutinous rice flour, vanilla powder, sugar, and fine salt.
  • Add the grated coconut and mix well.
  • In a separate bowl, whisk together the thick coconut milk and egg.
  • Gradually pour the coconut milk mixture into the dry ingredients while stirring until well combined.
  • Heat the Double Pan or a non-stick frying pan over medium heat.
  • Take a small portion of the dough and shape it into a round and flattened disc.
  • Place the disc on the heated pan and cook until it turns golden brown and cooked through.
  • Flip the Wingko Babat and cook the other side until it is browned and crispy.
  • Remove from the pan and let it cool.
  • Repeat the process with the remaining dough.
  • Serve the Wingko Babat as a delicious snack or dessert.
