  • 300g butter-margarine mixture
  • 100g grated edam cheese
  • 100g grated cheddar cheese
  • 350g low protein flour
  • 50g cornstarch
  • 20g powdered milk

  • 1 egg yolk
  • Grated cheddar cheese for topping

  • Preheat your oven according to the recommended temperature for baking cookies.
  • In a stand mixer, beat the softened butter until smooth and creamy.
  • Add the grated cheese to the butter and mix well until fully combined.
  • Gradually add the sifted flour, cornstarch, and powdered milk to the mixture. Stir until the dough comes together and can be easily formed into shapes.
  • Roll out the dough on a floured surface to a thickness of about 1 cm.
  • Cut the dough into rectangular shapes according to your desired size for Kastengel.
  • Place the cut-out dough pieces onto a baking sheet lined with parchment paper.
  • Brush the top of each Kastengel piece with the egg spread mixture.
  • Sprinkle grated cheese on top of each Kastengel piece.
  • Bake the Kastengel in the preheated oven using the Cookies menu or until they turn dry and golden brown.
  • Once baked, remove them from the oven and let them cool on a wire rack.
  • Once cooled, the Kastengel is ready to be served.
