Ingredients
To make Ceker Mercon, you will need the following ingredients:
- 500 g chicken feet
- 15 whole red bird's eye chillies
- 2 bay leaves
- 3 pieces of lime leaves
- 2 cm galangal, bruised
- 4 tbsp sweet soy sauce
- 1 stalk of lemongrass, bruised
- Salt
- Sugar
- Pepper powder
- Mushroom broth
For the spice paste:
- 8 shallots
- 3 cloves of garlic
- 5 red bird's eye chillies
- 5 large red chillies
- 3 candlenuts
- For garnish:
- Coarsely sliced onions
- Fried onions

Instructions
Here are the steps to prepare Ceker Mercon:
- Clean the chicken feet by removing any dirt or debris. Rinse them thoroughly under running water.
- Place the chicken feet in a Smart Pressure Cooker and add enough water to cover them. Cook until the chicken feet become soft and tender. Drain the cooked chicken feet and set them aside.
- In the same Smart Pressure Cooker, sauté the ground spices until fragrant. Add the bay leaves, lime leaves, lemongrass, and galangal. Stir and cook the spices until they are well-cooked and fragrant.
- Add the boiled chicken feet to the cooked spices. Stir well to coat the chicken feet with the spices.
- Pour in a little water, and season with salt, pepper, sugar, and mushroom stock. Simmer the mixture until the gravy thickens and the flavours are well combined.
- Remove the Chicken Feet Soto from the heat. Sprinkle with chopped green onions and fried shallots for added flavour and garnish.
- Serve the Chicken Feet Soto warm. You can enjoy it with steamed rice or as a standalone dish.
