Ingredients

To make Ceker Mercon, you will need the following ingredients:
  • 500 g chicken feet
  • 15 whole red bird's eye chillies
  • 2 bay leaves
  • 3 pieces of lime leaves
  • 2 cm galangal, bruised
  • 4 tbsp sweet soy sauce
  • 1 stalk of lemongrass, bruised
  • Salt
  • Sugar
  • Pepper powder
  • Mushroom broth
For the spice paste:
  • 8 shallots
  • 3 cloves of garlic
  • 5 red bird's eye chillies
  • 5 large red chillies
  • 3 candlenuts
  • For garnish:
  • Coarsely sliced onions
  • Fried onions

Instructions

Here are the steps to prepare Ceker Mercon:

  • Clean the chicken feet by removing any dirt or debris. Rinse them thoroughly under running water.
  • Place the chicken feet in a Smart Pressure Cooker and add enough water to cover them. Cook until the chicken feet become soft and tender. Drain the cooked chicken feet and set them aside.
  • In the same Smart Pressure Cooker, sauté the ground spices until fragrant. Add the bay leaves, lime leaves, lemongrass, and galangal. Stir and cook the spices until they are well-cooked and fragrant.
  • Add the boiled chicken feet to the cooked spices. Stir well to coat the chicken feet with the spices.
  • Pour in a little water, and season with salt, pepper, sugar, and mushroom stock. Simmer the mixture until the gravy thickens and the flavours are well combined.
  • Remove the Chicken Feet Soto from the heat. Sprinkle with chopped green onions and fried shallots for added flavour and garnish.
  • Serve the Chicken Feet Soto warm. You can enjoy it with steamed rice or as a standalone dish.
