- 1 duck
- 1/2 medium-sized tempeh, diced
- 2 bay leaves
- 2 lime leaves
- 1 lemongrass stalk, bruised
- 300 ml water
- A pinch of salt, sugar, and broth powder
Ground spices:
- 1 red chili
- 4 candlenuts
- 2 turmeric segments
- 1 ginger segment
- 8 shallots
- 8 garlic cloves
Instructions
Instructions:
- Grind the spices using the Flexie Food Processor.
- Heat oil in a Smart Pressure Cooker and sauté the ground spices along with bay leaves, lime leaves, and bruised lemongrass until fragrant.
- Add the duck to the cooker and pressure cook until it becomes tender (follow the recommended cooking time for duck).
- Once the duck is tender, mix it with the sautéed seasoning until well-coated and smooth.
- Add diced tempeh, water, sugar, salt, and broth powder to the cooker.
- Continue cooking until the flavors are well combined and the dish is heated through.
Palekko duck is now ready to be served.
